Growing up this is one of Daddy’s favorite things his Mommy would make. He would eat so much of it that his Mommy would have to end up making double batches. We hope you enjoy it too.
- 16 ounces of curly pasta cooked al dente
- 2/3 cup of good olive oil
- 6 tablespoons of white vinegar or lemon juice (Mom would use vinegar
- 1 teaspoon hot pepper sauce (optional, Mom didn’t add this)
- 1/2 teaspoon salt
- 2 cloves of garlic
- 1 lbs farmers cheese (can substitute with feta)
- 4 chopped tomatoes
- 1 cup black olive slices
- 1/2 cup chopped walnuts
- 1/2 cup chopped curly parsley
Finely chop garlic and then use salt and knife to smash garlic into a paste. Add garlic and vinegar into olive oil, whisk well. Place cooked pasta into sealable container and then add olive oil mixture. Seal pasta and shake well. Place pasta in refrigerator for 12 hours.
Remove pasta from refrigerator and add chopped tomatoes, walnuts, chopped parsley, cheese and olive slices. Toss gently and serve.
