Mom’s Pasta Salad

Growing up this is one of Daddy’s favorite things his Mommy would make.  He would eat so much of it that his Mommy would have to end up making double batches.  We hope you enjoy it too.

  • 16 ounces of curly pasta cooked al dente
  • 2/3 cup of good olive oil
  • 6 tablespoons of white vinegar or lemon juice (Mom would use vinegar
  • 1 teaspoon hot pepper sauce (optional, Mom didn’t add this)
  • 1/2 teaspoon salt
  • 2 cloves of garlic
  • 1 lbs farmers cheese (can substitute with feta)
  • 4 chopped tomatoes
  • 1 cup black olive slices
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped curly parsley

Finely chop garlic and then use salt and knife to smash garlic into a paste.  Add garlic and vinegar into olive oil, whisk well.  Place cooked pasta into sealable container and then add olive oil mixture.  Seal pasta and shake well.  Place pasta in refrigerator for 12 hours.

Remove pasta from refrigerator and add chopped tomatoes, walnuts, chopped parsley, cheese and olive slices.  Toss gently and serve.

Get’s Cheese Cake

This recipe is from Get.  By far the best cheese cake I have ever tasted. 

Ingredients:

  • 3 large packages of cream cheese at room temp(24 oz total)
  • 4 eggs at room temp
  • 1 1/2 cups sugar, split
  • 1 tsp vanilla extract
  • 1 pint sour cream
  • graham cracker crust mix
  • 5 tablespoon butter, melted

Directions:

Use 1 tablespoons of butter to grease 9 inch spring formed pan
Add graham cracker crumbs with 1/4 cup sugar and butter.  Form crust and set aside
Cream the cream cheese with 3/4 cup of sugar
Slowly add 1 egg at a time
Add vanilla
Pour cream cheese mixture into pan
Bake @350 for 30 minutes
While baking whip sour cream with 1/2 cup sugar, pour on top of cake and bake for another 10 minutes
Refrigerate for 2 hours

Mexican Flan

Ingredients:

  • 3/4 + 1/2 cup sugar
  • 4 cup milk
  • 8 eggs
  • 1 + 1/2 tsp vanilla

To carmelize sugar, in small heavy skillet heat 1/2 cup sugar over medium heat until sugar begins to melt (do not stir). Cook and stir 4-5 minutes more or until it turns a rich brown. Remove from heat and immediately pour caramelized sugar into an oval 3 qt shallow casserole (approx 9 x 13), quickly rotate dish so sugar coats the bottom and sides evenly.

Meanwhile, beat eggs, sugar, milk and vanilla. Pour into pan, place caramelized dish in a larger baking pan filled with hot tap water. Bake, uncovered in a preheated 325 F oven for 80 minutes or until a knife inserted half-way between the center and edge comes out clean. Remove dish, cool flan on rack. Cover and place in the fridge.

To unmold flan, loosen edges with a spatula. Slip end of spatula down sides to let air in. Invert flan onto a serving platter. Spoon caramel mixture that remains in dish on top.

Flan makes 12 servings. For 6 servings, half recipe and bake in 8 in round pan 30 – 35 minutes.

Get a man brownies

Ingredients needed:

  • 75 caramels (about 1.5 bags, Kraft)
  • 1/2 cup + 2/3 cup evaporated milk
  • 2 boxes German chocolate cake mix
  • 2 1/2 sticks melted butter
  • 12oz back chocolate chips
  • 1 cup chopped walnuts

Melt caramels with 1/2 cup evaporated milk.  In a bowl, mix melted butter, 2/3 cup of evaporated milk, cake mix and nuts.  Pour 1/2 mixture in greased 8.5 X 13 baking pan.  Bake @350 degrees for 10 minutes.  Sprinkle chocolate chips over baked cake and then pour the melted caramel over the top.  Follow with remaining mix.  Spread evenly.  Bake 18 to 20 minutes longer.  Cool and refrigerate before cutting into squares.
